Tired of grapes in your chicken salad? Me too.
We have to pack a picnic for our "Backpacking with the Boys" trip so I pulled a recipe from one of my cookbooks for chicken salad.
Solution for for boring chicken salad is...apricots! The recipe is "chicken salad with dried apricots and almonds" Make it for your next picnic. It is simple and loaded with protein, vitamins C and A and fiber.
1 lb of chicken tenders (boneless skinless) seasoned with salt and pepper and cooked in 2tsp of canola or olive oil.
1/3 cup of chopped dried apricots
2 tablespoons of fresh herbs such as cilantro or dill
1/2 of a red pepper - finely diced and seeded
1/2 cup of sliced almonds
1/2 cup of light mayonnaise
Mix together apricots, red pepper, and almonds in a medium-large bowl.
Add the cooked seasoned chicken tenders (diced into 1inch pieces).
Sprinkle the herbs on top and mix in the mayonnaise.
Mix well.
Refrigerate if not serving immediately. Add to croissant or whole wheat roll for a delicious and not-so-boring chicken salad sandwich.
